Food Thyme: Inside The Cardinal Club
For a “clandestine dining club,” the Cardinal Club isn’t much of a secret these days (you can read all about it here, here, and here). However, getting a reservation to this secret garden is a whole different story. Back in August, when we found a way to get an advanced peak into the club, the next available reservation was sometime in November, so this seems like the appropriate time to post it. Cardinal Club owner and chef, Simon, was kind enough to let us watch the preparation of one new corn crepe dish from beginning to end, which meant we woke up extra early to follow him around the Union Square farmer’s market to witness his seasonal menu come to life. We highly recommend making a reservation for a special occasion.
